Nose
The bouquet unveils a beautiful aromatic complexity carried by fresh red fruit notes such as cherry, raspberry and redcurrant. Subtle floral touches intertwine with light spicy nuances.
Palate
The palate stands out for its lightness and elegance. Its airy texture rests on fine, perfectly integrated tannins, leading to a flavourful finish with lovely persistence.
Food and wine pairing
This red wine pairs wonderfully with poultry such as chicken or turkey, as well as light white meats like veal or pork. It also pairs perfectly with fish dishes, soft-rind cheeses, or umami-rich Asian cuisine featuring mushrooms or soy sauce.
Service and storage
To fully appreciate all the nuances of this 2024 vintage, it is recommended to serve it at a temperature between 15 and 16°C. Decanting is advised before tasting to aerate the wine and separate the natural sediment. Approachable now, it possesses a solid structure that will allow it to evolve in the cellar until around 2034.
Other characteristics
The name of this cuvée refers to the year 909, a historic date marking the departure of Abbot Bernon to found the famous Abbey of Cluny. This wine displays a moderate alcohol level of 11.5% and follows a non-oxidative (ouillé) style.
The Authentic Expression of a Jura Terroir
The estate
Established in the village of Nevy-sur-Seille, at the heart of the Jura vineyards, the estate was officially founded in 2007 by François Rousset Martin. Backed by training in oenology and a family heritage shared between Burgundy and the Jura, the current owner now manages a 10-hectare vineyard certified organic. After a decade of transition, François Rousset Martin has independently vinified his entire production since 2018. The estate is renowned for its minimal-intervention approach and its commitment to showcasing the individual expression of each terroir.
The vineyard
This wine comes from plots located in the commune of Menétru-le-Vignoble, within the Côtes du Jura appellation. The vines, aged between 20 and 25 years, thrive on the specific lieu-dit known as "En Beuzard". This terroir is characterised by clay-limestone soils reminiscent of those found in Burgundy, offering optimal drainage and excellent water retention. The continental climate, marked by cool nights, encourages slow ripening and preserves the grapes' lovely acidity.
Winemaking and aging
The harvest is carried out by hand to select the best berries. After destemming, the grapes undergo a gentle maceration in stainless steel tanks for around 15 days, without punching down or pumping over. Fermentation begins spontaneously thanks to native yeasts, followed by a natural malolactic fermentation. The wine is then aged on fine lees for 18 months in 400-litre oak barrels. It is finally bottled by gravity, without fining or filtration.
