Tasting
Colour
The glass reveals a deep, dark ruby hue, almost black at its core, with subtle violet highlights.
Nose
The aromatic bouquet stands out with a remarkable floral expression, evoking violet, intertwined with red fruit aromas such as cherry and raspberry. These are joined by spicy notes of pepper, cedar, cocoa and vanilla, along with a characteristic mineral touch.
Palate
The attack is generous, dominated by black fruit flavours such as blackberry and plum, underscored by delicate woody touches. The tannic structure, rich and silky, is perfectly balanced by a lovely freshness. The mid-palate reveals mineral complexity and notes of dried herbs, leading to a long, clean and vibrant finish.
Food and wine pairing
This red wine pairs wonderfully with pan-seared duck breast, a lamb tagine with mild spices, or a well-seasoned vegetarian curry.
Service and storage
To fully appreciate the "Les Acacias" 2022 vintage, it is recommended to serve it at a temperature between 17 and 18°C, taking care to decant it about two hours before tasting while it is young. This wine offers superb aging potential and can be enjoyed until around 2042.
The floral and mineral expression of a great wine from the Southwest
The estate
Located in the Southwest wine region, on the highest slopes of the appellation, the Fabien Jouves - Mas Del Périé estate was officially founded in 2006. It was at this time that Fabien Jouves, the current owner, took over the family vines to establish his own operation. Now at the helm of a vineyard spanning around thirty hectares, this passionate winemaker distinguishes himself through his respectful approach to living ecosystems, applying the principles of biodynamics. He is dedicated to producing single-plot cuvées that express, with great purity, the full singularity and richness of his terroirs.
The vineyard
Rising to 350 metres in altitude on the limestone plateau of the Causse, this exceptional terroir lies on the borders of the Quercy region and the Cahors appellation area. The vines, around forty years old, thrive on sideritic limestone soils rich in iron. This high-altitude location ensures cool nights, preserving the vibrancy of the berries. The entire vineyard is cultivated using organic and biodynamic methods, encouraging deep rooting and an authentic expression of the soil.
The vintage
The year 2022 benefited from weather conditions particularly favourable to the ripening of the berries. The growing cycle unfolded under a mild climate, allowing the grapes to reach optimal phenolic maturity without developing an excessive sugar concentration, thus preserving a lovely natural balance.
Winemaking and aging
Winemaking is carried out naturally, without any oenological additives. Fermentation starts spontaneously thanks to indigenous yeasts and takes place in concrete vats, with skin maceration lasting around thirty days. The wine then undergoes extended aging for 18 months in large wooden foudres, allowing its structure to refine while preserving the brightness of the fruit.
