Description
Characteristics and Tasting Tips for the Savagnin Ouillé 2024 from Domaine Rolet
Tasting
Nose
The nose is powerful, marked by notes of vanilla and spice from oak ageing, enveloping a mineral character typical of Savagnin. This empyreumatic dimension gives the bouquet a striking presence, evoking grilled and toasted nuances.
Palate
The palate is every bit as mineral as the nose, driven by lively acidity and a taut structure. Malolactic fermentation adds a roundness that balances the grape variety's natural vivacity, resulting in a wine that is both precise and harmonious.
Food and Wine Pairings
Thanks to its mineral, invigorating palate, this wine pairs ideally with a starter or shellfish, whose texture and briny flavours it enhances.
An Arbois Savagnin Ouillé with a Mineral, Empyreumatic Profile from Domaine Rolet
The Estate
Founded in 1942 by Désiré Rolet in Arbois, in the Jura, Domaine Rolet now extends over around 65 hectares spread across the four appellations of the Jura. Since 2018, the estate has been owned by the Flambert, Dupuis and Devillard families and run by Christophe Flambert, who continues the work begun by the Rolet family. The vineyard has been in conversion to organic farming since 2021, demonstrating a commitment to environmentally friendly viticulture.
The Vineyard
This wine comes from the Arbois vineyard, and more specifically from the Montesserin terroir, located to the west of the town. The soils combine limestone marls and clay-silt, with Middle Jurassic limestone outcrops offering varied slopes and exposures. Here, Savagnin finds ideal conditions for expressing its minerality.
Winemaking and Ageing
The grapes for the Savagnin Ouillé 2024 were hand-harvested late, in October, in order to reach full maturity. Malolactic fermentation was carried out to bring more roundness to the grape variety's natural acidity. Ageing follows the ouillage technique, with part of the wine aged in tank and part in oak, the barrels being regularly topped up to avoid any prolonged contact with oxygen.
Grape Variety
This wine is made from 100% Savagnin, a native grape variety of the Jura locally known as Naturé.
