Tasting

Colour
The colour reveals a ruby hue of moderate intensity, marked by lovely translucency and delicate fuchsia and magenta reflections at the edges.

Nose
The nose offers a complex bouquet blending red fruit aromas, such as bright cherry, strawberry and redcurrant, with subtle floral notes of rose petals and hibiscus. With aeration, delicate mineral touches, white pepper and herbs emerge.

Palate
Fluid and silky, the palate seduces with its delicate texture and finely woven tannins. Medium in volume, it reveals at its core a remarkable mineral concentration, with saline and chalky accents. The finish, dry and persistent, lingers on mineral notes and subtle herbaceous touches.

Food and wine pairing

This red wine pairs wonderfully with lamb stewed in sweet spices, sautéed beef with vegetables, or roasted game meats. It also pairs very well with refined poultry dishes seasoned with Mediterranean herbs, as well as aged hard cheeses like Comté or dry goat cheeses.

Service and storage

With a fine structure, this Unic 2023 can be cellared and enjoyed until around 2043.

The estate

Founded in 2001 by Marjorie and Stéphane Gallet, Domaine Le Roc Des Anges is a benchmark in the Roussillon. Located in Latour-de-France, the estate has developed around a demanding biodynamic philosophy, growing from 10 to about fifty hectares. Renowned for its wines with pronounced minerality, the property has undergone a major transition. Today, Thibault Ponthier, an entrepreneur from the world of fine gastronomy, is the current owner and runs the estate, upholding the singular identity of this terroir in the south of France.

The vineyard

This IGP Côtes Catalanes wine comes from a single 3- to 5-hectare plot planted in 1991. Nestled on the north-facing slope of the Força Real mountain, near the village of Montner, these old vines thrive on ancient, heavily weathered and well-draining schist soils, free of clay. Cultivated according to biodynamic principles, this terroir forces the plant to draw deeply on its resources, resulting in naturally low yields of around 17 hectolitres per hectare.

The vintage

2023 allowed the vines to benefit from an extended growing cycle. Thanks to the plot's north-facing exposure, the grapes were able to reach full, balanced physiological ripeness without suffering from an excessive build-up of sugars caused by heat.

Winemaking and aging

The Unic 2023 grapes are harvested by hand in small crates. Fermentation begins with indigenous yeasts in closed concrete vats, using whole bunches, for about seven days. After pressing, the juice returns to the vat to complete fermentation. Aging takes place exclusively in these same concrete vessels, with no new oak, in order to preserve the freshness of the fruit and encourage slow micro-oxygenation.
