Description

Characteristics and tasting notes of the Bois des Merveilles 2023 by Domaine Jean-Baptiste Senat

Tasting

Appearance
A beautiful garnet red colour reveals itself in the glass.

Nose
The nose displays great aromatic complexity, opening on notes of ripe black fruits, strawberry and raspberry. It then evolves towards hints of liquorice, garrigue herbs, tapenade and chocolate, subtly underlined by nuances of undergrowth and a touch of oak.

Palate
On the palate, this wine offers a perfect balance between power and silkiness. The texture rests on fine, grainy tannins, accompanied by moderate acidity. The long, flavourful finish extends the experience with delicate fruity and spicy notes.

Food and wine pairing

This wine pairs wonderfully with characterful meats such as roast duck, young wild boar stew or beef dishes such as a rib of beef or a tournedos. It will also enhance slow-cooked dishes with Mediterranean herbs, fine charcuterie or a platter of aged cheeses, such as a Saint-Nectaire.

Serving and cellaring

The Bois des Merveilles 2023 can be enjoyed now for its freshness and elegance, while also offering excellent cellaring potential that will allow it to develop further in the cellar over many years.

The elegance and depth of a red wine from the Minervois

The estate

Founded in 1996 with the production of its first vintage, Domaine Jean-Baptiste Senat is located in Trausse, in the heart of the Languedoc. Now run by Jean-Baptiste and Charlotte Senat, this 15-hectare property has established itself as a true pioneer of natural winemaking in the region. Driven by an artisanal philosophy, the estate favours organic growing methods and minimal-intervention winemaking. Domaine Jean-Baptiste Senat thus strives to produce digestible and elegant wines that authentically reflect the richness of their terroir.

The vineyard

Located within the Minervois appellation, the vineyard stretches across the foothills of the Montagne Noire. The vines, trained in goblet to protect them from the summer heat, thrive on a mosaic of soils made up of clay-limestone and siliceous garrigue lenses. Yields are strictly limited to 30 hectolitres per hectare and the harvest is carried out exclusively by hand to ensure a rigorous selection of the berries. This exceptional terroir is home to very old vines, including century-old Carignan vines and 60-year-old Grenache.

Vinification and ageing

The vinification of the Bois des Merveilles 2023 is carried out using whole-bunch grapes, thereby preserving the integrity and freshness of the clusters. Fermentation, conducted exclusively with indigenous yeasts, lasts around fifteen days. The wine then benefits from an extended ageing of 20 months in oak barrels, allowing it to develop its full complexity before being bottled at the estate.

Grape varieties

Carignan (60%), Grenache (40%).
