Tasting notes

Appearance

The wine reveals a pale yellow hue enhanced by bright, crystalline highlights.

Nose

The aromatic bouquet opens on refreshing citrus notes, evoking lemon and pink grapefruit. It is then enriched with delicate touches of sweet spices and musky nuances.

Palate

The palate offers a smooth texture combined with a beautiful power. Carried by remarkable minerality, the palate stands out for its precise structure and stretches towards a finish of impressive length.

Food and wine pairings

This great white wine pairs wonderfully with delicate dishes such as foie gras, noble seafood like lobster or grilled langoustine, as well as fish in creamy sauces. It also enhances poultry in sauce, particularly free-range chicken, and can be enjoyed with aged cheeses such as goat's cheese, Reblochon, Brie de Meaux or Comté.

Serving and cellaring

To fully appreciate this Puligny-Montrachet 1er Cru "Les Pucelles" 2023, it is recommended to serve it at a temperature between 11 and 13°C.

The purity and elegance of a great white Burgundy wine

The estate

While the family history began in 1885, Domaine Henri Boillot was officially founded in 2005. Located in Meursault, in Burgundy, the estate is now managed by Henri Boillot, dedicated to white wines, and his son Guillaume, responsible for the red wines. The estate stands out for its ultra-sustainable viticulture and early harvests aimed at preserving the energy of the berries. Widely acclaimed, it produces cuvées recognised for their pure, taut and mineral style, precisely reflecting the excellence of its terroirs.

The vineyard

The Pucelles terroir, classified among the Premiers Crus of Puligny-Montrachet, lies just a few metres from the famous Grands Crus. The estate cultivates a one-hectare parcel there, on soils combining clay and limestone. The vines, averaging 53 years old, are planted at a density of 10,000 vines per hectare. The vineyard is managed according to a strict philosophy of sustainable farming, favouring systematic ploughing, banning chemical weedkillers and limiting yields to guarantee optimal quality.

The vintage

The year 2023 was marked by a mild and dry winter, followed by a spring free from major frost that allowed for an early and even flowering. Véraison then benefited from warm, sunny conditions. Faced with exceptionally high temperatures during the harvest, the teams picked at night or in the early morning to preserve the freshness of the fruit. These climatic conditions made it possible to obtain an abundant and healthy harvest, endowed with a fine acidic balance.

Winemaking and aging

For the production of this Puligny-Montrachet 1er Cru "Les Pucelles" 2023, the grapes are pressed in whole bunches. Vinification is carried out without any bâtonnage in order to preserve the tension and purity of the wine. Aging takes place in 350-litre barrels, a format larger than regional standards. This cuvée rests 50% in new barrels and the remaining 50% in barrels from a single vintage.
