Description
The pure, mineral expression of a white wine from the Jura by Domaine des Marnes Blanches
The estate
Founded in 2006 by Pauline and Géraud Fromont, Domaine des Marnes Blanches is located in the Southern Revermont, at the heart of the Jura. Starting with four hectares, the estate now spans twelve hectares across varied terroirs. Still at the helm of the estate, the winemaking couple farm their vines according to the principles of organic and biodynamic agriculture. Recognized for their minimal-intervention approach, they craft authentic wines that faithfully reflect the geological richness of their region.
The vineyard
Coming from the plot known as "Sur le Muant", this cuvée is made from vines around 60 years old. Located in the Southern Revermont, within the Côtes du Jura appellation, this terroir benefits from excellent sun exposure and an altitude that fosters ideal thermal variations. The clay-limestone soils give the grapes a pronounced minerality and a rich texture. The vineyard is grassed over and worked mechanically to preserve biodiversity and soil health.
The vintage
2022 proved to be particularly favorable for the region. This vintage benefited from favorable weather conditions, with adequate rainfall and balanced temperatures. Disease pressure remained manageable, allowing for a smooth growing cycle and a harvest of healthy grapes with optimal ripeness and beautiful concentration.
Winemaking and aging
The Savagnin "Sur le Muant" 2022 grapes are harvested by hand with rigorous sorting. Whole bunches undergo direct pressing before spontaneous fermentation with indigenous yeasts. The wine is then aged for an extended period in neutral or older oak barrels. Aged using the "ouillée" method, this cuvée preserves the freshness of the fruit.

Color
A pale gold hue with a subtle brilliance makes for an immediately captivating appearance.
Nose
The nose opens with aromas of candied citrus, orange peel, ripe apple, and juicy pear, underscored by a mineral touch of wet stone. With aeration, delicate notes of white flowers, linden blossom, kumquat, and dried fruits emerge.
Palate
On the palate, the attack is initially taut and elegant, carried by fine acidity. The structure is dense and mineral, evolving into a more enveloping texture. The finish is long and crystalline, marked by a pleasant salinity and a noble bitterness reminiscent of citrus zest.
Food and wine pairing
This gastronomic wine pairs wonderfully with pan-seared river fish, citrus-infused ceviche, seared scallops, or poultry with cream and morels. It also enhances regional cheeses such as young Comté or aged Tomme, as well as ginger-spiced Asian dishes.
Service and storage
For optimal tasting, it is recommended to serve this wine at a temperature between 11 and 12°C. With remarkable aging potential, it can be cellared for many years, evolving over time into complex notes of honey, dried fruit, and beeswax.
