Tasting notes
Colour
The colour reveals a deeper hue than usual, adorned with golden nuances and nascent amber highlights.
Nose
The bouquet opens with aromas of fresh walnut, curry leaf, and dried apple. With aeration, it reveals beautiful complexity with notes of pastry, toasted bread crust, spices, honey, and a saline touch.
Palate
Despite considerable power, the palate is taut and elegant, carried by a refreshing acidity. It unfolds a texture marked by mineral salinity, revealing flavours of spice and earth. The finish is exceptionally long, tonic, and profoundly mineral.
Food and wine pairing
This wine pairs wonderfully with river fish in a beurre blanc sauce, fried dishes, or poultry with morels in a creamy sauce. It also enhances platters of aged regional cheeses such as Comté or Morbier, as well as creamy risottos.
Service and storage
To fully appreciate the Chardonnay Sous Voile "Empreinte" 2022, it is recommended to serve it at a temperature between 10 and 12°C, ideally after decanting or in large glasses to encourage its aeration. Endowed with excellent aging potential, it will evolve favourably in bottle for many years. Once opened, it should be enjoyed within two to three days.
The authentic expression of Jura terroir by Domaine des Marnes Blanches
The estate
Founded in 2006 by Pauline and Géraud Fromont, who remain its current owners, Domaine des Marnes Blanches has quickly established itself as an essential reference in the Jura. This vineyard stands out for its environmentally respectful approach, certified organic. The winegrowers favour a philosophy of minimal intervention and parcel-by-parcel vinification, allowing the full singularity of their terroirs to be expressed. The estate is now celebrated for the purity and vitality of its cuvées.
The vineyard
Located in the Sud Revermont sector, within the Côtes du Jura appellation, the vineyard spans the communes of Cesancey, Vincelles, and Sainte-Agnès. The grapes for this cuvée come specifically from the Cesancey terroir. The vines thrive on soils of white marl covered with a layer of limestone. The vineyard is cultivated according to organic farming principles, with natural grass cover between the rows to preserve biodiversity and soil health.
Winemaking and aging
After manual harvesting and rigorous sorting, the grapes undergo gentle pressing. Fermentation begins naturally through indigenous yeasts in neutral oak barrels. The wine then benefits from extended aging under a veil of yeast. This traditional method, carried out without topping up, promotes slow, controlled oxidation. The wine is finally bottled without fining or filtration.
