Description
Characteristics and tasting tips for the Mâcon-Fuissé 2021 from Domaine Cordier Père et Fils
Tasting
Appearance
The appearance displays a crystalline hue with pale gold highlights, characteristic of the appellation's finest wines.
Nose
The bouquet opens with very floral aromas of hawthorn and honeysuckle. Notes of fresh almond and white fruit complete this aromatic expression, which gains complexity with aeration, gradually revealing slightly buttery nuances.
Palate
The attack is straightforward and well-structured. The creamy texture envelops the palate with finesse, while the lively and zesty finish brings beautiful persistence. This wine offers a remarkable balance between the generous expression of the Mâconnais and the minerality typical of Burgundy.
Food and wine pairings
This Mâcon-Fuissé 2021 pairs perfectly with noble fish and seafood, particularly scallops, salmon, or oysters. It also pairs elegantly with poultry and white meats in sauce or grilled. For more creative pairings, opt for soft cheeses like Brie or Camembert, leek pies, or Burgundy snails. Razor clams à la plancha with parsley butter also constitute a remarkable pairing.
Service and cellaring
Serve this Mâcon-Fuissé 2021 chilled, between 10 and 12°C during the meal, or slightly cooler as an aperitif. Decanting for a few hours allows the aromas to express themselves fully.
A Mâcon-Fuissé combining finesse and minerality
The estate
Established since 1945 in Fuissé, in the heart of the Mâconnais in Burgundy, Domaine Cordier Père et Fils is today managed by Christophe Cordier, who took the reins in 1987. The estate spans 31.5 hectares spread over more than 120 plots across 9 villages. A perfectionist with high standards, Christophe Cordier applies exceptionally demanding viticultural practices and has converted the entire vineyard to organic and biodynamic farming, certified since 2024. Internationally recognized, he was named "Hero of the Year" by Robert Parker and "miracle worker" by Wine Spectator, making the estate an essential reference in the Mâconnais.
The vineyard
This Mâcon-Fuissé is made from plots located in the village of Fuissé, benefiting from the diversity of the estate's geological substrates. Cultural practices are characterized by very short pruning, severe disbudding, manual leaf thinning, and entirely manual harvesting plot by plot. The estate favors compost and integrates animal labor to preserve soil structure. Biodynamic principles are rigorously applied according to the lunar calendar and the use of dynamized preparations.
The vintage
The winter of 2021 was marked by a frost episode of rare intensity affecting the entire French vineyard. Milder spring conditions favored flowering at the end of May. June and July proved particularly rainy, followed by meteorological instability between mid-July and mid-August.
Winemaking and aging
This Burgundy estate benefits from state-of-the-art technical facilities with fully air-conditioned gravity-fed cellars allowing for high-precision work. Long and careful aging on original lees is carried out in barrels selected from the best French woods of very fine texture, exclusively from high forests with house toasting.
