This wine pairs ideally with grilled red meats such as a fine cut of beef, slow-cooked dishes in sauce like beef bourguignon or coq au vin, as well as recipes featuring roasted mushrooms. It also pairs beautifully with hard cheeses such as Saint-Marcellin.
Serving and cellaring
To fully appreciate Château Ormes de Pez 2025, it is recommended to serve it at a temperature between 17 and 18°C. This elegant vintage shows excellent aging potential and can evolve in the cellar for several decades.
The powerful and refined signature of a Saint-Estèphe wine
The estate
Founded in the mid-18th century, the Château Ormes de Pez is located in the prestigious Saint-Estèphe appellation, in the Bordeaux region. After having several owners, it was acquired in 1939 by the Cazes family, who still run it today with Jean-Charles Cazes at the helm. A true mark of quality, the estate stands out for its environmental commitment, certified HVE 3 since 2018.
The vineyard
The 25-hectare terroir extends across the renowned Saint-Estèphe appellation. The vines, averaging around thirty-five years old, are planted on a remarkably diverse geology composed of Garonne gravels rich in quartz and clay-sandy soils. The estate practices sustainable viticulture, promoting biodiversity and respect for the ecosystem.
The vintage
The year 2025 stands out as one of the earliest since 1989. The mild winter, spared from frost and hail, gave way to a warm, dry spring, encouraging rapid growth and even flowering. The summer was marked by high temperatures and two successive heatwaves. Fortunately, timely rainfall at the end of August helped preserve the balance and acidity of the grapes. Harvest took place from September 9 to 22, delivering moderate yields of 36 hL/ha with optimal ripeness.
Winemaking and aging
After manual harvesting and rigorous vinification, careful aging lasts 16 months in French oak barrels, 20% of which are new, refining the structure while preserving the brightness of the fruit. Alcohol: 13.2% vol.
Grape varieties
The blend of Château Ormes de Pez 2025 is composed of 58% Merlot, 35% Cabernet Sauvignon, 4% Cabernet Franc and 3% Petit Verdot.
