Tasting Notes
Color
A pale, clear yellow hue enhanced by delicate golden highlights.
Nose
The bouquet reveals a beautiful aromatic purity, opening with citrus notes such as lemon and grapefruit. It then develops nuances of white flowers and white-fleshed fruits like peach and pear.
Palate
The attack reveals a texture that is both broad and taut, carried by a lively acidity that balances the whole. The finish is particularly long and fresh, with a chalky, mouth-watering sensation typical of its terroir.
Food and Wine Pairing
This white wine pairs perfectly with delicate white fish such as sea bass, sole, or turbot, whether simply grilled or served with a creamy sauce. It will also beautifully complement roasted poultry, seafood risottos, as well as pressed, cooked-curd cheeses such as Comté, Beaufort, or Gruyère.
Serving and Aging Potential
This Sémillon sur Calcaire 2025 will reveal all its aromas when served at a temperature between 10 and 12°C. Built for aging, it will begin to show its full potential from 2028 and can be kept until around 2040.
The Aromatic Expression and Refinement of Sémillon by Château Doisy-Daëne
The Estate
Located in Barsac, in the Bordeaux region, Château Doisy-Daëne is a historic estate whose excellence was recognized in the 1855 Classification. Acquired in 1924 by the Dubourdieu family, it has established itself as a true benchmark, both for its sweet wines and its dry whites. Today, Jean-Jacques and Fabrice Dubourdieu head the estate, passionately continuing the scientific and winemaking legacy of their father, Denis Dubourdieu. The estate spans 25 hectares and stands out for its exceptional terroir.
The Vineyard
The grapes used to produce these Dry White Bordeaux Wines come from a rigorous selection of the estate's oldest Sémillon vines, with an average age of 50 years. They are deeply rooted in the limestone plateau of Haut-Barsac, a geological exception covered with clay and sand that gives the grapes remarkable freshness and minerality. To preserve the quality of the fruit, the harvest is carried out entirely by hand.
The Wine
To celebrate 100 years of the Dubourdieu family at the helm of Château Doisy-Daëne, a limited cuvée of 1,200 bottles was created from the oldest Sémillon vines of the 2023 vintage.
Winemaking and Aging
Fermentation and aging of the Sémillon sur Calcaire 2025 take place entirely in once-used barrels. This process lasts approximately 10 months, a precise technical choice aimed at highlighting the complexity of the grape variety without masking the identity of its terroir.
