Tasting

Color

The wine displays a brilliant ruby hue, enhanced by lovely violet highlights that reflect its youth.

Nose

The bouquet reveals fine aromatic complexity dominated by red-fruit notes, notably raspberry and cherry. Floral nuances of violet and rose mingle harmoniously with peppery and spicy touches. With aeration, subtle aromas of licorice and graphite add an extra dimension to the overall profile.

Palate

The attack is elegant and refined, unveiling a silky texture and fine, perfectly integrated tannins. The palate shows a lovely concentration of red and black fruits, supported by bright acidity that brings freshness and energy. The finish lingers pleasantly with fruity notes alongside hints of spice and minerality.

Food and wine pairings

This wine pairs perfectly with grilled or roasted red meats, especially herb-crusted beef. It also accompanies sauced poultry with elegance, dishes made with wild mushrooms, or feathered game. For cheese lovers, it pairs harmoniously with Roquefort or Époisses.

Serving and cellaring

It is recommended to serve the Savigny-Les-Beaune 1er Cru "Dominode" 2020 at a temperature between 15 and 16°C. Aeration for 30 to 45 minutes will allow the wine to fully express its aromatic complexity. This wine can be enjoyed now and will continue to evolve until around 2032.

A concentrated and fresh Savigny-Les-Beaune Premier Cru

The estate

Founded in 1750 in Beaune, in Burgundy, Domaine Chanson is based around a medieval bastion with walls 7 to 11 m thick. Owned by the Bollinger group since 1999, it now covers 88 ha (43 historic hectares in Côte de Beaune and 45 ha in Côte Chalonnaise acquired in 2023). General management has been led by Thierry Berger since 2025, with parcel-by-parcel winemaking by climat.

The vineyard

The climat La Dominode is one of the most renowned premier crus in the Savigny-Les-Beaune appellation. Located at the entrance to the Savigny valley, on the lower slopes of the Jarrons hillside at the edge of the commune of Beaune, this vineyard benefits from an ideal east-facing exposure. The soils have a complex composition combining clay, silt, sand, limestone, and chalk, giving the wine its distinctive minerality. Domaine Chanson farms around 1.6 hectares on this exceptional terroir.

The vintage

The year 2020 in Burgundy was marked by extreme weather conditions. After a mild winter and a warm spring with insufficient rainfall, summer saw a pronounced drought with only 37.9 millimeters of rain in July and August. Several heatwave episodes followed one another, with temperatures regularly exceeding 30°C. A few well-timed storms nonetheless helped prevent a complete halt in ripening. Harvesting began very early on August 23 at Domaine Chanson, under bright sunshine, producing small, concentrated grapes, with acidity preserved in a surprisingly good way.

Vinification and aging

The Savigny-Les-Beaune 1er Cru "Dominode" 2020 is made with an approach that favors infusion over extraction. After rigorous sorting, the grapes are quickly cooled and then undergo cold maceration before fermentation begins. A proportion of whole-cluster fruit is used to bring complexity and structure. Alcoholic fermentation takes place with pump-overs and punch-downs tailored to each parcel. After fractionated pressing, the wine undergoes malolactic fermentation in oak barrels. Aging lasts between 14 and 18 months in barrels, around 25% of which are new oak, in the historic Bastion cellars.
