Tasting

Appearance
Its hue reveals a dark gold, a deep amber with bright golden highlights. In the glass, slow tears form, testifying to its viscosity and long tropical maturation. Despite the absence of cold filtration, the liquid retains a beautiful clarity.

Nose
The olfactory bouquet is rich, fruity and indulgent. It opens with aromas of ripe banana, vanilla and toasted almonds, wrapped in warm caramel and a hint of cinnamon. Subtle notes of grapefruit, buttery pastries, plum, coconut and tobacco leaf complete this remarkable complexity.

Palate
The attack is smooth and structured, immediately revealing flavours of butterscotch and creamy vanilla. The mid-palate, broad and rounded, unfolds notes of red plum, orange zest and cocoa nibs, enhanced by a delicate hint of sea salt. The finish is medium to long, offering a controlled warmth and a beautiful woody persistence.

Food pairings and tasting moments

This prestigious spirit is ideally enjoyed neat, at room temperature, in a tulip glass to concentrate its aromas, or possibly over ice. Perfect for a meditative tasting at the end of a meal, it pairs masterfully with grilled or smoked meats. On the sweet side, it enhances desserts made with dark chocolate or caramel. Those who enjoy bolder pairings will also appreciate it with aged cheeses, such as a mature Parmesan or a blue-veined cheese.

Mixology

Given its status as an exceptional product and its great rarity, it is strongly recommended to enjoy this rum without any embellishment. Should it be used in mixology, it would only tolerate very pared-back "spirit-forward" cocktails, such as a lightly sweetened Old Fashioned, so as not to mask its precious complexity.

Officially founded in 1703, with archives attesting to activity as early as 1654, Mount Gay is the oldest continuously operating rum distillery in the world. Located in the parish of St. Lucy, it embodies the excellence and authenticity of Barbados Rum. Its historic production tools combine pot stills, continuous columns and a rare copper Coffey still. Deeply attached to its terroir, the distillery champions regenerative agriculture, the use of pure water filtered by the coral bedrock and the protection of biodiversity. Now owned by the French group Rémy Cointreau, Mount Gay perpetuates an ancestral savoir-faire under the direction of Trudiann Branker, the house's first female Master Blender. The brand stands out for its transparency, its eco-responsible commitment and its unwavering connection to the maritime world.

Exceptionally Aged 15 Years Old: the quintessence of amber Rum in a limited edition

The Exceptionally Aged 15 Years Old is an exceptional amber Rum that marks a historic turning point for the distillery, being its first expression to carry an explicit age statement. This non-vintage rum is the result of an exclusive single-column distillation (100% column still) from molasses, a singular technical approach that gives it a remarkable identity.

Its production is based on full maturation of at least 15 years under the tropical climate of Barbados, exclusively in American oak casks that previously held bourbon. This long ageing process was meticulously overseen by three generations of Master Blenders: Jerry Edwards, who initiated the distillation, Allen Smith, who watched over the evolution of the casks, and finally Trudiann Branker, who carried out the final blend.
