Nose
The nose opens with delicate floral notes of rose petal, accompanied by aromas of fresh red fruits and citrus nuances, notably grapefruit and blood orange. A spicy dimension completes this airy bouquet.

Palate
On the palate, the attack is lively and almost effervescent, evolving toward fine, powdery tannins with great freshness. The palate expresses a remarkable mineral tension and a beautiful salinity, offering a harmonious balance between roundness and vivacity. The finish lingers elegantly on notes of spice and minerality.

Food and wine pairings
This wine pairs ideally with roasted pheasant or white meats such as veal, served with a morel or chanterelle mushroom sauce.

Serving and storage

The estate
Founded in 1816 in the Agly Valley, Mas Amiel stands as one of the historic estates of Roussillon. Acquired in 1999 by Olivier Decelle, the estate now spans approximately 152 hectares of vines across 95 plots. A visionary owner, Olivier Decelle successfully diversified production by developing exceptional dry wines alongside the natural sweet wines that built the estate's reputation. Certified organic since 2017 and biodynamic since 2020, Mas Amiel cultivates its vines with respect for the terroir and the environment, under the winemaking direction of Nicolas Raffy.

The vineyard
The vineyard from which the Alt. 433 M 2021 originates is located on the Les Altaïres plot, the highest point of the estate at 433 meters above sea level. This exceptional plot rests on calcoschist, granite, and mica-schist soils that impart the wine's characteristic minerality. The vines, approximately 60 years old, benefit from a favorable exposure and unique climatic conditions linked to the altitude, with cool nights that preserve aromatic freshness. This unique Maury terroir allows the expression of great finesse and remarkable mineral tension.

The vintage
The 2021 vintage in Roussillon was marked by a harsh winter with frost episodes affecting the French vineyard. A milder spring allowed flowering in late May, followed by a contrasting summer with rainy months of June and July. Late-season conditions favored a balanced ripening of the grapes, preserving the freshness and aromatic expression sought for this altitude cuvée.

Winemaking and aging
The Alt. 433 M 2021 is vinified using a minimalist approach that prioritizes terroir expression. Fermentation takes place in temperature-controlled stainless steel tanks with indigenous yeasts. The wine is aged exclusively in tank, without any oak contact, in order to preserve the aromatic purity and freshness characteristic of this altitude wine.
