Three years are required for a vineyard to start producing wines that can be certified organic. During these three years, the vineyard is labelled "vineyard under conversion to organic". The winemaker must comply with the regulations on organic products established by the certifying body. The certifying body also ensures that these regulations are adhered to. During the period of conversion, the wines are not yet considered organic. Vineyards under conversion to organic practices will only be able to use this term after having been certified by one of the certifying bodies in charge of the control of vineyards on behalf of public authorities and the validation of compliance with the European and French regulations on organic viticulture.
