The Special Cuvée 007 is made with fruit from 85% Grands Crus and Premiers Crus.
The standard bearer of the Bollinger House, the Special Cuvée owes its name to Georges Bollinger, who, in 1911 decided to dedicate this champagne to the famous British agent, because he found the name "Brut sans année" (BSA) unsuitable to a champagne of such subtlety. Dressed in the colours of James Bond, the Special Edition 007 pays homage to the famous secret agent's long-standing partnership with Bollinger. Several versions of this Special Cuvée 007 edition have been produced. In accordance with the French Évin law, we have chosen to offer the sleek, sober and refined black version, upon which James Bond does not directly appear.
The Special Cuvée 007 is a Brut champagne with a dosage between 8 and 9 grams per litre. Its maturation time is much longer than what is required by the Champagne appellation.
The delicate colour of the Special Cuvée 007 reveals the distinctive golden hue of the red grape varieties, as well as a fine effervescence.
The nose expresses complex aromas, especially spices and ripe fruits. There are gourmet notes of baked apple, compote and yellow fruits, especially peach.
On the palate, the Special Cuvée 007 stands out for its balance between liveliness, structure and great length. Its fine and pleasant effervescence, as well as mouth-coating flavours of brioche, fresh nuts, spices and yellow fruits.
We recommend serving the Special Cuvée 007 during a convivial moment at a temperature between 8 and 10 ° C in order to highlight its style and aromas. You may choose to open this champagne now or let it age for a few more years in the cellar.

The Special Cuvée 007 will go perfectly with all types of fish, especially raw fish and sushi. It will also pair nicely with shellfish, a delicious grilled lobster or langoustines. It matches beautifully with white meats, poultry, cured ham and certain cheeses, such as Parmesan.
