Description
A white wine from Chablis Village with a soft structure
A renowned appellation of Burgundy, Chablis produces dry white wines of great character. The Chablis Village of Billaud-Simon is a 100% Chardonnay from a vineyard of Kimmeridgian soils. The ageing of the wine is done in stainless steel tanks, from 8 to 10 months depending on the vintage. These vats preserve a certain freshness and minerality in the wine. The wine is then racked twice before bottling in late spring.
At the tasting, the Chablis Village 2015 of Billaud-Simon reveals a pretty white gold colour with pale green reflections. The nose is beautiful, developing aromas of peach, banana, citrus and brioche. It shows great balance on the palate, seamlessly combining freshness and elegance, remaining round and flexible until the end. We can note ripe fruit and mineral flavours that blend harmoniously with the smooth structure of the wine. To keep until 2020.
This comment is mainly intended to describe at a given moment the general profile of the wine. Note that over time, the wine (which necessarily evolves in the bottle) may develop other organoleptic qualities.
